Give Your Regular Lassi A Summer Makeover With Easy Twists

There’s something comforting about having a chilled glass of lassi on a hot day that instantly calms you down. It feels familiar, is easy to make, and has been an essential part of Indian summers for years. But after a certain point, the regular sweet or even the salted version can sometimes feel repetitive, and you begin to look for ways to upgrade your regular glasses of lassi.

What makes lassi interesting is how easily you can experiment with it with other ingredients. The base is simple, just the curd and water, but what you add to it can totally change its flavour, texture, and even how it feels while sipping. From fruity combinations that feel like dessert to savoury versions, lassi can be as plain or as innovative as you want it to be.

You also do not need any fancy ingredients to upgrade your regular glass of lassi. Most of them can be made from things that you already have in your kitchen, such as herbs, spices, fruits, or just a handful of nuts. With a few small tweaks, your everyday lassi can feel elevated and suited for hot days when you want to have something cooling but also familiar and satisfying. Here are some simple ways by which you can upgrade your regular lassi without overdoing it.

Mango Saffron Lassi 

This lassi feels like sipping summer in a glass. The sweetness of ripe mango blends nicely with curd, while adding a few strands of saffron gives it a gentle aroma that makes it feel a bit more indulgent. It is a bit thicker than the usual lassi, and you can also enjoy it as a dessert drink, particularly after lunch.

Ingredients (Serves 2):

1 cup thick curd

¾ cup ripe mango pulp

8–10 saffron strands (soaked in 1 tbsp warm milk)

1–2 tbsp sugar or honey (adjust to taste)

½ cup chilled milk or water

How To Make 

Blend the thick curd with fresh mango pulp until it turns smooth and silky. Add the soaked saffron strands to it and sugar or honey as per preference. To this, pour in the chilled milk or water to adjust the consistency, and blend again until it turns creamy and a bit thick. Serve chilled and place a few saffron strands on top.

Mint Jeera Lassi

This version instantly refreshes you, particularly when the heat feels a bit too much to handle. Fresh mint delivers the drink a cool flavour, while roasted cumin gives it a bit of earthy taste. Mint jeera lassi feels light, is not too heavy, and you can also have it as a mid-day drink when you do not feel like eating too much.

Ingredients (Serves 2):

1 cup curd

10–12 fresh mint leaves

½ tsp roasted cumin powder

½ tsp black salt

Salt to taste

½ to ¾ cup chilled water

How To Make

Blend the curd with a handful of mint leaves until you get a smooth texture. Now, add the roasted cumin powder, black salt, and a pinch of regular salt to this. Pour in the chilled water and blend again for a short time. Taste and adjust the seasoning as required before serving the cold and savoury drink.

Rose Pistachio Lassi 

If you are looking for something that feels a bit different but also does not feel too heavy, rose pistachio lassi is a good choice. The rose flavour feels soft and a bit floral, whereas crushed pistachios add a bit of texture to the drink. It feels light but still unique in every sip.

Ingredients (Serves 2):

1 cup curd

2 tbsp rose syrup

2 tbsp crushed pistachios

1 tbsp sugar (optional)

½ cup chilled milk or water

How To Make

Take the blender and blend the curd with a small amount of rose syrup until it mixes evenly. Add a little chilled milk or water to adjust the thickness as per preference. Now, stir in the crushed pistachios to this instead of blending them altogether. Serve the chilled glass of rose pistachio lassi by sprinkling extra nuts on top.

Chikoo Honey Lassi 

It may sound a bit unconventional, but chikoo works surprisingly well in lassi because it is naturally sweet and has a smooth texture. You do not need much added sugar here. The result is thick, a bit caramel-like in taste, and extremely filling, making it perfect for when you want to have something between a drink and a snack.

Ingredients (Serves 2):

1 cup curd

2 ripe chikoos (pureed)

1–2 tbsp honey

½ cup chilled milk or water

How To Make 

Peel and blend the ripe chikoo to make a smooth pulp. Add the curd and blend it with the chikoo until it turns creamy. Mix in a little honey if required, and pour in the chilled water or milk to loosen the thick mixture a bit. Serve it cold, and you'll have lassi that feels naturally sweet and rich in every bite.

Masala Chaas-Style Lassi 

This one is much closer to chaas but a bit thicker, making it more enjoyable. It is simple, a bit spiced, and also perfect for everyday drinking. The flavours feel familiar, nothing fancy, but also work extremely well when the heat feels intense or when you want to have something effortless.

Ingredients (Serves 2):

1 cup curd

¾ cup chilled water

½ tsp roasted cumin powder

½ tsp black salt

1 tbsp chopped coriander

½ green chilli (optional, finely chopped)

Salt to taste

How To Make 

Whisk or blend the curd with chilled water until it gets a thin consistency. Add the roasted cumin powder, black salt, and finely chopped coriander to this. If you like a little heat, add finely chopped green chilli. Mix everything well and serve instantly for a light, cooling drink.
