How to choose delicious fertilized duck eggs

For fertilized duck eggs, it's best to choose young ones as they are usually softer, tastier, and more nutritious.

You can check by holding the egg up to the light: if the empty space inside is small, it's a young egg, while a large space usually indicates an older egg. When held in your hand, a young egg will have a slightly rough shell with a speckled white coating.

Conversely, old eggs are usually dark green, light to the touch, and rattle when shaken; they will be dry and less nutritious when eaten. Therefore, you should avoid eggs that are too light, feel hollow, or make rattling noises, as these may be old or spoiled eggs.

If not going to be used immediately, store eggs in a cool, dry place. However, don't keep them for too long as the embryo inside will continue to develop, making the eggs old and less tasty.

How long does it take to boil a fertilized duck egg until it's cooked through?

According to the experience of many housewives, you should only add the eggs when the water starts to boil. From this point, cook for about 15 minutes, then turn off the heat and cover the pot for another 5 minutes to ensure the eggs are fully cooked and retain their sweet, fragrant flavor.

Eggs should not be removed from the water too early because they may not be thoroughly cooked, resulting in a fishy taste and making them unsafe to eat.

Before boiling, rinse the eggs under running water to remove any dirt. When placing them in the pot, use a ladle to avoid breaking them, and gently stir in a circular motion to help the eggs hold their shape and cook evenly. During boiling, keep the heat low so the eggs cook slowly.

Additionally, to enhance the flavor, many people boil fertilized duck eggs in coconut water instead of regular water.

Note:

Because fertilized duck eggs are considered "cold" in nature, they should be eaten with warming ingredients such as ginger and coriander to prevent bloating, stomach chills, and slow digestion.

This dish should be eaten in the morning to give your body energy for the whole day, avoiding eating it in the evening or late at night as it can cause indigestion and weight gain.

You should also avoid eating too many fertilized duck eggs in a day or eating them continuously, as this can increase bad cholesterol levels in the blood, easily leading to cardiovascular diseases, high blood pressure, diabetes, etc., and increase protein intake, which is not good for people with gout.

Do not consume boiled fertilized duck eggs that have been left overnight, as they may be contaminated with harmful bacteria, affecting your health.
